Citron is a large fragrant citrus fruit with a thick, bumpy, and highly aromatic rind. The rind can be candied or preserved in sugar syrup. The inside of the fruit contains a small amount of juicy pulp and seeds, but it is not usually consumed due to its sour and bitter taste.

Citron is primarily used for its fragrant rind, which is highly prized for its essential oils and is used in a variety of culinary and non-culinary applications. The rind can be candied or preserved in sugar syrup and used as a flavoring agent in baked goods, confections, and desserts. Citron essential oil is also used in perfumes, soaps, and cosmetics.

Adaptations, Inc. is a certified organic farm established in 1979 and a regional Food Hub incorporated in 1993 in Kona. Their Food Hub operates Fresh Feast, a community-supported agriculture (CSA) program currently serving 450+ families. Owners Maureen and Tane Datta live in Honaunau on their seven-acre diversified farm, which has been certified organic since the early 1980s. In addition to raising two daughters, Amber and Saffron, they also cultivate cinnamon, vegetables, herbs, edible flowers, microgreens, avocados, citrus, and exotic fruit.
