Grass-fed Beef Ribeye Cap Steak

Known as deckle steak or calotte, it is highly prized by top chefs, beef aficionados, and butchers alike. A common preparation for this cut is to roll it tightly so that the length of the cylinder is parallel with the grain of the meat, tying it off in several sections, and cutting small steaks out of that roll.

100% grass-fed and finished beef pasture-raised on the Big Island of Hawaii. These cattle are raised with no added hormones or antibiotics. Minimally processed and butchered in-house at Farm Link, Hawaiʻi.

Hāmākua Meat Processors is situated on the Hāmākua Coast, on the island of Hawaiʻi. This region is known for its lush pastureland, perfect for raising livestock. Owner/General Manager Brad DeLuz sources cattle for Farm Link from several Big Island ranchers. These cattle are born locally and pasture-raised in Hawai'i. They are 100% grass-fed and grass-finished. Each animal is individually selected to ensure it is of the highest quality. After initial processing by Hāmākua Meat Processors, the beef is prepared by Farm Link Hawaiʻi's in-house butchers.
