Oyster mushrooms are also known for their beta-glucans, iron, vitamin C and D (thanks to natural sunlight), calcium, and fiber.

Opala Foods

Carved out of an industrial warehouse in Kaneohe, two friends started an urban farm designed to capture and repurpose agricultural waste starting in 2018. Noah had spent years managing distilleries and saw an opportunity in all of the waste that was being created by everyday consumer items like spirits, coffee, and wood products. However, it wasn't until he was introduced to Elijah, a bioengineering student at UH and fellow mushroom grower, that a plan was formed. Today, Elijah has his masters in bioengineering and Opala Foods continues to grow and refine their product offering. 

Their mission is to find a better way to feed this growing world. They are developing new methods of food production while improving biodiversity and food security in Hawaii. They grow indoors so that there is no need for pesticides or other nasty chemicals while also improving the quality of the food itself. 

Being indoors also means that they have very little room to grow and process so they have limited varieties and limited capacity. Opala grow several types of oyster mushrooms that are harvested throughout the week so that you can have the freshest product each and every time. They are also growing and expanding a line of value-added oyster mushroom products such as the Day Trippers Jerky. 

Opala has grown their business by partnering with food producers and coffee shops directly to use their green waste like Honolulu Coffee Company for their coffee grounds. They are always looking for new partners as they grow their business. 

At Opala Foods they find a better use for rubbish, they don't sell it.
