Hominy Pozole

Fresh made pozole/hominy. Made to order nixtamalized 'White' non-GMO corn grown in Waimanalo.
You can grind your batch to make rustic tortillas or cook them in soup for a special pozole/hominy dinner party for one or many.

In Mexico, pozole is prepared and served during celebratory meals like Christmas or New Year's Eve. It's also a great way to celebrate everyday! We love to cook/boil them in chicken or pork broth until tender or until they "pop like popcorn" in the broth (which could take up to one hour).  You could season your broth with fresh herbs, too. You could also use your crockpot or Instapot to expedite the process.  After cooking, garnish them with freshly chopped onions, cilantro, or other vegetables your heart desires.

What is hominy?  Hominy is dried corn that has gone through a process called "nixtamalization" in which the corn is soaked and cooked in an alkaline solution. Nixtamalizing the corn helps to remove the corn hulls, but more importantly, the process makes the niacin (B vitamin made and used by our body to turn food into energy and keeps our nervous and digestive systems healthy), more nutritionally available and the corn easier to digest.
