After an apprenticeship in Oaxaca Mexico in 2018, Chef Ramón Germán set out to open his own restaurant in Hawaiʻi. But when he realized that he couldn't find the fresh, nixtamal tortillas he made and ate daily, he switched his focus.RAIZ is the home of Hawaiʻi's micro-tortilleria — focused on small batch, fresh ancestral-style tortillas made with beautiful varieties of heirloom corn sustainably sourced from small generational farms throughout Mexico.
