Empty Elle Bagels is the first and only producer of Montreal Style Bagels in Hawaiʻi. These hand-rolled and honey-boiled bagels are made with local ingredients (like Mānoa Honey), have zero preservatives, and are baked fresh in small batches on the Windward Side of Oʻahu. The differences in style are vast between their more mainstream New York cousins, but it can be summed up by saying Montreal Style Bagels are sweeter, smaller, and denser. They use strategic techniques to create the perfect bagel (i.e., different fermentation process resulting in a unique texture; the use of local honey sweetens the dough and water they boil in; heavily seeded on both sides; and flipped during the bake to make both halves equally desirable). Owner/Baker, Tim, is a lifelong bagel lover and always dreamed of operating a bagel shop after hearing stories of his paternal line of bakers in Brooklyn. When a COVID career pivot opportunity was presented, Tim knew it was time to introduce Hawaiʻi to the Montreal Style Bagels he fell in love with long ago. "Empty Elle" is a play on the three letter moniker, "MTL", the City of Montreal is known for.
