Chayote Squash

The pear-shaped Chayote squash is native to central Mexico. The squash, also known as a mirliton is sometimes compared to a cucumber or zucchini, and it can be eaten raw or cooked. The chayote's firm, crisp texture and the fact that it absorbs flavors make it an excellent choice for sautés and salads. Its firmness also makes it ideal for spiralizing.

Adaptations

Tane and Maureen Datta are the owners of Adaptations, Inc and have been involved in cultivating sustainable food systems both as homesteaders and in their development of a distribution center for local growers.  They live in Honaunau, Hawaiʻi on their seven acre diversified farm, which has been certified organic since the early 1980s. In addition to raising two daughters, Amber and Saffron, they also raise cinnamon, vegetables, herbs, edible flowers, micro greens, avocados, citrus and exotic fruit. Their farm and home are solar-powered and utilize on-farm vermiculture and soil composting systems.

Survival of earth’s living things, such as plants and people, depends on their ability to change with the earth’s environment. Survival of human social institutions depends on their ability to change with humanity. Adaptations are the ways we evolve to match our environment. Their name indicates their desire to work closely with earth’s natural systems in order to strengthen society’s connection to our environment.
