Hugely popular in Brazil, this cut comes from the top of the rump and is also known as a sirloin cap. Known for being beautifully tender, juicy, and producing an amazing flavor when cooked. The traditional preparation for this cut is for it to be skewered and grilled yakitori style but it can also be whole roasted or pan cooked.

Hāmākua Meat Processors is situated on the Hāmākua Coast, on the island of Hawaiʻi. This region is known for its lush pastureland, perfect for raising livestock. Owner/General Manager Brad DeLuz sources cattle for Farm Link from several Big Island ranchers. These cattle are born locally and pasture-raised in Hawai'i. They are 100% grass-fed and grass-finished. Each animal is individually selected to ensure it is of the highest quality. After initial processing by Hāmākua Meat Processors, the beef is prepared by Farm Link Hawaiʻi's in-house butchers.Arrives frozen. After thawing, use within one or two additional days.
