Fennel has a unique flavor similar to anise or licorice. The bulb can be eaten cooked or raw and the leaves can be used as a raw garnish or to add a little extra flavor to salads.
The farm has grown exponentially over the years, from an initial 5-acre plot leased in 2001 to a core campus of 24 acres in 2011, to an inspiring 281-acre footprint in 2019. MA‘O is now integrating this newly acquired acreage into the farming operation, and production is increasing every month. At a 24-acre scale, the farm grew about 80 tons of produce per year.
MA‘O grows more than 40 different varieties of fruits and vegetables, including salad greens, root crops, cooking greens, herbs, and seasonal tropical fruits.
