These beautiful blue tortillas are made fresh in Kalihi, from Heirloom corn imported from Estado de Mexico & Tlaxcala. RAIZ tortillas are made from dried heirloom corn, using a mesoamerican process called nixtamalization that removes the kernel's tough outer skin, making it easier to cook and make into masa. The flavors of this corn is earthy, grassy, and sweet like elotes. Pairs best with beans and queso. It's deep blue color, tender texture, and sweet flavor make it a go-to any time of day!

After an apprenticeship in Oaxaca Mexico in 2018, Chef Ramón Germán set out to open his own restaurant in Hawaiʻi. But when he realized that he couldn't find the fresh, nixtamal tortillas he made and ate daily, he switched his focus.

RAIZ is the home of Hawaiʻi's micro-tortilleria — focused on small batch, fresh ancestral-style tortillas made with beautiful varieties of heirloom corn sustainably sourced from small generational farms throughout Mexico.
