The tenderloin, aka filet mignon, is tender, juicy, and relatively lean.  Season liberally, sear, and finish to medium-rare.

100% Hawaiian grass-fed and finished beef, born and pasture-raised in Waimea on the Big Island. These cattle thrive without added hormones or antibiotics, ensuring pure, wholesome beef. Minimally processed by Hāmākua Meat Processors and fabricated in-house at Farm Link Hawaiʻi.

• Keep refrigerated or frozen. Thaw in the refrigerator or microwave. 
After thawing, use within one to two days.
