Pasture-raised chicken marinated with organic extra virgin olive oil and a fragrant blend of thyme, rosemary, and sage. Simple, savory, and herbaceous, this ready-to-cook half chicken lets the quality of the chicken shine while making an easy centerpiece for dinner at home.

Cooking Instructions: Roast skin-side up at 400°F for approximately 40–55 minutes, or until the thickest part of the chicken reaches an internal temperature of 165°F. Rest 5–10 minutes before serving.

Our chicken comes from a small family farm on Oʻahu's North Shore, where J. Ludivico raises his birds on pasture. The chickens live in movable "tractors" with open bottoms, allowing them to forage on grass and insects. These portable shelters are regularly moved to fresh pasture, ensuring the chickens have shade, protection from predators, and access to a natural diet.
