Pasture-raised J. Ludovico chicken marinated in a bold, savory blend of beer, garlic, onion, cumin, cilantro, and smoky chipotle peppers. Ready to cook at home, this flavorful half chicken brings together warm spices, gentle heat, and smoky depth for an easy, satisfying meal.
Cooking Instructions: Roast skin-side up at 400°F for approximately 40–55 minutes, or until the thickest part reaches an internal temperature of 165°F. Rest 5–10 minutes before serving.

Our chicken comes from a small family farm on Oʻahu's North Shore, where J. Ludivico raises his birds on pasture. The chickens live in movable "tractors" with open bottoms, allowing them to forage on grass and insects. These portable shelters are regularly moved to fresh pasture, ensuring the chickens have shade, protection from predators, and access to a natural diet.
