When green, the hard green/white pulp of young tamarind fruit is often used as a component of savory dishes, in a broth, as a pickling agent. It's commonly used to make a Filipino soup called sinigang.

Sour when green, sweet with a hint of sour when ripe. When Tamarind is ripe, the brittle shell cracks open easily to reveal seeds covered in a sticky, sweet/sour paste that's high in vitamin B and calcium. Some people crack the fresh pods and suck the paste off the seeds, like Li Hing Mui.

About Lokoea Farms

Nestled in Haleʻiwa's Anahulu river valley on Oʻahu's North Shore, Lokoea Farms is a family-run operation that has been growing delicious food since 2000. They mainly produce naturally-grown Haleʻiwa Gold oranges and Meyer lemons, as well as a variety of other fruit & produce including limes, grapefruit, avocado, mango, papaya, and more.

Donald started planting the trees about 15 years ago, and his daughter Noe has now joined him as farm manager. They are now both at the farm full-time. As a small farm, they cater to each and every customer, and always encourage open communication and feedback.

They follow GAP (Good Agricultural Practices) to make sure their food is safe. They strive for the freshest, longest-lasting produce by harvesting on-demand and/or following proper post-harvest procedures for each crop.
