South American tuber, also known as ground apple or ground pear. Yacon has a sweet, crisp, refreshing flavor, similar to jicama and can be enjoyed raw or cooked!
This versatile vegetable can be enjoyed raw as a refreshing snack, used as a garnish for salads, mixed in with stir fry, or roasted in the same way you would other tubers and root vegetables.
Tips:
The skin has a bitter taste so it is best to peel before preparing.
As it ripens, the outside will begin to brown. It is still safe to eat. Similar to a banana, the more brown the outside is, the sweeter the yacon.
If enjoying raw, peel immediately before serving due to its quick tendency to brown. Sprinkling lemon juice over peeled yacon can help prevent browning.
