These tasty tortillas are made fresh in Kalihi, from Heirloom corn (non-GMO) imported from Chiapas, Mexico.

RAIZ tortillas are made from dried heirloom corn, using a mesoamerican process called nixtamalization that removes the kernel's tough outer skin, making it easier to cook and make into masa. Tuxpeno corn is a delicious and richly pigmented varietal. It yields a masa with the deepest shade of yellow and a full corn-like taste. 

Due to limited supply of heirloom corn, you may receive any of these beautiful varieties:

About Raíz Tortillas

After an apprenticeship in Oaxaca Mexico in 2018, Chef Ramón Germán set out to open his own restaurant in Hawaiʻi. But when he realized that he couldn't find the fresh, nixtamal tortillas he made and ate daily, he switched his focus.

RAíZ is the home of Hawaiʻi's micro-tortilleria — focused on small batch, fresh ancestral-style tortillas made with beautiful varieties of heirloom corn sustainably sourced from small generational farms throughout Mexico.

It is the RAÍZ promise to deliver nothing but pure masa and tortillas using only three ingredients: Corn, Water, and Lime. Simple as they are intended to be, just how our ancestors made them.
